Chez Pascal

Before Water Fire in Providence we ate at Chez Pascal where we had a delightful meal. We started by splitting a bowl of the soup of the evening which was a Cream of Fennel with polenta croutons. It was filling and flavorful. This was followed by marinated beets with pistachio purée, pine nuts, crispy goat cheese & summer greens.

We split the vegetarian entrée ensconced in a perfect empanada. Then came the highlight of the evening: house butchered pork of the day. This evening it was three slices of loin and then leg along with pulled pork around a perfect potato gratinée topped with a bit of salad. Perfect!

For dessert we shared a tasting of three french custards: lemon basil crème caramel, chamomile crème brulée and a chocolate pot de crème. What a way to start our walking journey through Water Fire.
